Individual Apple Pies, *Launch Party*, and Instagram Snapshot Social!!
Make sure you keep reading after the recipe…I have a fun surprise!!
Is there a more comforting food than apple pie on the planet? I don’t think it’s possible to eat a delicious apple pie and not feel warm and happy on the inside. The smell alone, of a pie baking in the oven is heavenly. Makes you feel at home when you breathe it in, don’t you think?
That’s why I made these for you today! I want you to welcome you to my new home on the inter webs, and I want you to feel welcome – and happy when you’re here!
I hope these little apple pies do just that. They are overstuffed with a caramel-y, cinnamon apple filling, and the crust is so buttery and delicious. And, bonus! You get to eat the whole pie. All.By.Yourself.
Today me and some of my favorite blog friends are throwing a Launch Party for Back For Seconds new site!

Individual Apple Pies
| Serves | 6 |
| Prep time | 35 minutes |
| Cook time | 20 minutes |
| Total time | 55 minutes |
| Meal type | Dessert |
| Misc | Child Friendly, Freezable, Gourmet, Pre-preparable, Serve Hot |
| Occasion | Christmas, Formal Party, Thanksgiving |
Ingredients
Crust
- 1 cup flour
- 1/3 cup butter (cold)
- 1/2 teaspoon salt
- 2 heaped teaspoons water (cold)
Filling
- 4 medium apples (I like Granny Smith)
- 2 tablespoons butter
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
- 2 heaped tablespoons corn starch
- 1/3 cup water
Directions
| Step 1 | |
| Preheat oven to 400* | |
| Filling | |
| Step 2 | |
| Peel, core, and chop apples and place in a skillet. Sprinkle with the cornstarch and stir. Add in the sugar, cinnamon and water and cook over medium heat, stirring occasionally, for about 10 minutes or until apples just start to soften and a sauce forms. Turn off heat. | |
| Pie Crust | |
| Step 3 | |
| In a food processor pulse together flour, salt, and butter until it looks like crumbs. Add water a little at a time until a dough forms. | |
| Step 4 | |
| Roll out dough on a clean surface to 1/4" or so thickness. Cut out 6 circles using a cookie cutter or a glass about 3 1/2" wide. (You will have to re roll to get all 6 circles, but work quickly. You want the butter in the dough to melt in the oven, not on your counter.) Place circles in a muffin tin and press lightly to form the pie shell. Roll out the remaining scraps of dough and cut into strips or shapes to place on top of the pies. | |
| Step 5 | |
| Spoon generous amounts of the filling into each pie crust. I overfilled mine to give them nice high rounded tops. Place remaining strips or shapes of dough on top of the filling. | |
| Step 6 | |
| Bake pies for about 20 minutes or until crusts start to become golden. *For a darker crust brush an egg wash over pies before baking. Let cool in the pan completely before removing. | |
And now for something else superduper FUN!
Like many of you, I am a bit obsessed with Instagram. It’s a fun way to connect on a more personal level with everyone. You get to see snippets of their life that you don’t get to see in a blog post. I noticed that I am not the only one who can’t get enough of it, so I put together a photo-a-day type schedule that we can all do together! Eeeik! It’s gonna be so fun and I can’t wait to see all of your pictures!
This schedule is meant to be a sort of inspirational guide for you. It’s going to be so cool seeing everyone’s different interpretations. I hope you will join the Snapshot Social! Here’s how it will work:
First of all, it would be swell if you followed me
For each picture you post use the hashtag #snapshotsocial This way you can see the photos of all the awesome people following this same schedule.
Easy, right? You just might find new friends through doing this and hopefully we will all get to know each other better too.
Thanks so much for coming to my Launch Party today! I really am thankful to each one of you who takes the time to visit me and read along. You guys rock! Now go check out my friends’ killer party recipes

These look absolutely AMAZING! I’ve been drooling over these ever since I discovered your recipe a few months ago, but I have a quick question: why do you cook the apple pie mixture on the stove before baking? Is this absolutely necessary, or can you just let them cook together with the pastry?

Thanks in advance!
Ikhlas recently posted..Recipe: Soft Baked Chocolate Chunk Cookies
Hi there! I cook the apples in advance because the pies are small and don’t cook long in the oven. I didn’t want crunchy apples in my pies. However, I haven’t tried it that way, and maybe if you cut the apples small enough, the time in the oven would be sufficient. Let me know if you try it! Thanks for stopping by!
Thanks for your reply! That makes sense…crunchy apples in apple pie are no fun. I’m making mine poptart/MacDonald’s mini apple pie style, so I’ll just have to experiment and see.
