Tropical Chocolate Mousse Parfaits
Sometimes you just need a mammoth sized chocolate treat. This recipe serves 2 chocoholics nicely.
This is similar to the traditional “dirt” recipes, only I made it even more indulgent. I know, big surprise!
I used cream cheese, butter, and coconut extract to amp up the chocolate pudding and turn it into a decadent mousse. Throw in a heaping portion of crushed oreos and more coconut and you will never be able to make traditional dirt ever again. This is seriously outrageously good. You have been warned.
If you are not a fan of coconut, no worries! Simply leave out the coconut and extract and you have a purely heavenly chocolate parfait! You really can’t go wrong either way. Pinky swear.
Tropical Chocolate Mousse Parfaits

Ingredients
- 1 box chocolate pudding (small)
- 2oz cream cheese (softened)
- 1 tablespoon butter (softened)
- 4oz Cool Whip
- 1/4 teaspoon coconut extract
- 1 1/2 cup milk
- 12 Oreos (crushed)
- 4 tablespoons coconut (shredded)
Directions

| In a large bowl beat together pudding, cream cheese, butter, coconut extract, and 1/2 cup of milk until very smooth. Add in the rest of the milk and mix well. Add in the cool whip and 1/2 the oreos and stir together. | |

| In 2 glasses drop a spoonful of oreo crumbs. Top with a layer of the mousse, another layer of oreos, another layer of mousse, and a final layer of oreos. Sprinkle each one with 2 TBS of coconut. Chill for at least 1 hour before serving. | |

Haha, I made a double batch and easily ate half. Soooo good! I found the coconut extract at (the dreaded) Walmart.
Yowza! These bring back memories of being young. We hardly ever had Oreos growing up, so they were a huge treat!
