Skinny Cherry Chocolate Peanut Butter Granola
Skinny recipes are so much fun to create – and when they taste like this, they are even more fun to eat!
This is the first granola recipe on Back For Seconds but I doubt it will be the last. I love foods with layers of flavors and various textures – this is the jackpot! Eat it on yogurt or in a bowl with milk, or just eat it by the handfuls!
It starts off with your basic old fashioned oats, and I added some chia seeds to really boost the nutritional value. Those things are powerhouses of nutrition and they have a nice nutty flavor. I added dried cherries for a little chewy texture and a pop of fruity sweetness, and some cinnamon because I love it so much and have to add it to nearly everything I make
I melted a bit of peanut butter and honey to coat the oats with – that’s what makes those yummy clusters of goodness!
What about the chocolate? Looks pretty chocolatey, right? All that chocolate can’t be skinny, can it?
After the granola baked, I immediately sprinkled a small handful of chocolate chips over the mixture and let it sit. After a bit I gave it a stir and some of the chocolate melted and started to coat the granola. Really it’s just a small amount of chocolate and it’s dark chocolate anyway so it’s got anti oxidants and all that so it’s good for you, kay?
Just eat it

Skinny Cherry Chocolate and Peanut Butter Granola

Ingredients
- 2 cups oats
- 1/3 cup chia seeds
- 2/3 cups dried cherries
- 1/2 cup peanut butter
- 1/3 cup honey
- 3/4 teaspoons cinnamon
- 1/4 cup dark chocolate chips
Directions
| Step 1 | |
| Preheat oven to 325* | |
| Step 2 | |
| Stir together oats, chia seeds, cherries, and cinnamon in a medium bowl. set aside. | |
| Step 3 | |
| In a small bowl microwave peanut butter and honey until melted (about one minute). Stir and pour over oat mixture. Stir well until everything is evenly coated. Pour onto greased cookie sheet and press down so the mixture all sticks together in the pan. Bake 12 minutes then stir. Bake 10 more minutes and stir again. Bake 5 more minutes and remove from oven. Sprinkle with chocolate chips and let cool. Store in a sealed container at room temperature. | |

i’m just a tad bit obsessed with granola. and peanut butter. and chocolate. and you already knew all of that. And this???? I must make it! I love the cherries and chia seeds involved.

How many calories do you think are in a serving of this? Or I guess the whole recipe & broken down into servings?
There are about 160 calories in each 1/4 cup serving. I probably only used about 2 Tbs on my yogurt though and it was plenty! Enjoy!
