Skinny Slow Cooker Southwest Chicken Soup
I have one last healthy recipe for you before Skinny January comes to an end. It’s like I took a plate of my favorite Mexican food and turned it into a fantastic bowl of soup!
This is one of those meals you will make over and over again; the kind of recipe that satisfies everyone.

*It’s super simple to make – just throw everything in the crock pot

I have been using my crock pot a lot lately, I am so thankful for those things! Sure makes dinner time easier for me!
I love making soups in the crock pot because it gives the flavor of a soup that’s been cooking all day, without having to leave the stove on for several hours. Plus your house will smell delicious

Skinny Slow Cooker Southwest Chicken Soup

Ingredients
- 28oz canned crushed tomatoes
- 28oz chicken stock
- 2 boneless skinless chicken breasts
- 1 can corn
- 1 medium onion (chopped)
- 3 cloves garlic (chopped)
- salt (to taste)
- 1 heaped tablespoon chili powder
- 2 teaspoons cumin
garnish
- light sour cream (optional)
- low fat shredded cheese (optional)
Directions

| Add everything to the crock pot and cover with the lid. Cook on high 4 hours or low 6-8 hours. Shred chicken and stir everything together. Garnish with a touch of sour cream and cheese if desired. Enjoy! | |

as well as big ol’ hunks of avocado as a garnish! I am in love with this soup, girlie! So flavorful and perfect for a chilly January evening when I don’t feel like cooking (which is, uh, every evening)

I thought it had lots of Mexican flavor, but my family likes a heartier (thicker) soup.
Tim does too so I added a cream soup to thicken it.
