Easy Homemade Instant Pancake Mix
This Easy Homemade Instant Pancake Mix makes breakfast a breeze! I always have a big container on hand, and once you see how easy making your own Homemade Instant Pancake Mix is, you will too!
I have two one year olds and a four year old, and they love pancakes. They eat them at least 3 times a week for breakfast – we have a lot of fun playing with different kinds of pancake flavors!
I decided to try my hand at making my own homemade pancake mix last summer, and I haven’t turned back since. It’s so easy!
I mix up a huge batch of this easy homemade instant pancake mix just once every few months, and then I whip up a big batch of pancakes in the flavor of the day (just wait until you see my next post…*gasp!*). It’s so inexpensive and convenient, and unlike the store bought variety, when you make your own, you get to pick what goes into the mix. These can easily be made whole wheat too!
Throw in fresh or frozen fruit, chocolate chips, purees… experimenting is half the fun!

Whatever pancakes don’t get eaten that day, I lay out on a cookie sheet and freeze. Then I throw them in a ziplock bag and all I have to do is pop them in the toaster for a quick breakfast anytime my kids want them. Easy peasy!

Easy Homemade Instant Pancake Mix
Ingredients
- 8 cups flour
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 3 tablespoons sugar
- 1 heaped tablespoon salt
Directions

| In a large bowl whisk all together. Transfer to a sealed container. Shake well before each use. | |
Easy Instant Pancakes
| Prep time | 5 minutes |
| Cook time | 15 minutes |
| Total time | 20 minutes |
Ingredients
- 2 cups Easy Homemade Instant Pancake Mix
- 1/4 teaspoon cinnamon
- 2 cups milk
- 2 eggs
- 1/4 cup sour cream
- 1 1/2 teaspoon vanilla
Directions
| Step 1 | |
| In a bowl whisk together all except the pancake mix until well blended. Gently add in the pancake mix and stir just until incorporated. Do not over mix. | |

| Heat a buttered griddle on medium heat and ladle batter onto griddle. Once pancakes bubble all over they are ready to flip. Let them cook another minute or two on the other side or until they start to brown. Serve warm. | |

this is wonderful, thankyou for an easy pancake recipe, now me and my kids can make pancakes everyday.
I liked the part about freezing the one that doesn't get eaten, seems like there is always enough batter for one that no body can eat.
