Have you ever made a cookie pie in a cast iron skillet? They are amazing! Deep dish cookie pies are a treat everyone goes nuts over, and they are super easy to make! I think they’re easier than a batch of cookies because you don’t have to do all that scooping. Just pile all the cookie dough into the skillet and bake away!

The cookie itself is similar to chocolate chip cookie dough except I used all brown sugar, giving it a deeper, caramel like flavor. Tucked in between the two layers of cookie dough are little caramel bits that get chewy and gooey when baked.

I suggest eating this pie a la mode. The salted caramel sauce is unbelievable on top of warm Salted Caramel Deep Dish Cookie Pie and a big scoop of ice cream.

Salted Caramel Deep Dish Cookie Pie

Cook time 30 minutes
Total time 45 minutes
An outrageous deep dish chocolate chip cookie pie baked in a cast iron skillet. This incredible pie has a caramel center and a lip smacking good salted caramel sauce on top!

Ingredients

Cookie Pie

  • 1 cup butter (softened)
  • 1 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups flour
  • 12oz semi sweet chocolate chips
  • 1 cup caramel bits
  • sea salt

Salted Caramel

  • 4 tablespoons butter
  • 1 cup brown sugar
  • 1/2 cup cream
  • 3 teaspoons vanilla extract
  • sea salt (to taste)

Directions

Cookie Pie
Step 1
Preheat oven to 350
In a large mixing bowl cream the butter and brown sugar until light and fluffy. Add the eggs and vanilla, mixing until smooth. Add the salt and soda, and gradually mix in the flour until well incorporated, stir in the chocolate chips.
Step 2
Coat a 12" cast iron skillet with non stick spray. Press half the cookie dough into the skillet and top with the caramel bits. If desired, sprinkle with a bit of sea salt. Top with remaining cookie dough. Bake for 25-30 minutes or until golden and a toothpick inserted into the center of the cookie comes out clean.
Tastes awesome served with ice cream and salted caramel sauce :)
Salted Caramel Sauce
Step 3
In a saucepan over medium heat, combine butter, brown sugar, cream, and vanilla. Continue cooking and stirring for about 8 minutes or until the caramel thickens. Turn off heat and add sea salt. Let cool about 5 minutes before using.

      You sure can, Heidi! I used a 12" skillet though, so if you use a standard 9" pie diish you will have extra dough. Just make cookies with the leftovers ;)
