Ok, peanut butter lovers, this one’s for you! This is one of those super easy, crazy delicious recipes that you will make again and again.
These start off like a thick, chewy peanut butter cookie. Then, because what goes better with peanut butter than chocolate, let’s throw in some chocolate chips.
Next comes the most beautiful part. Add a bag of unwrapped mini Reese’s peanut butter cups. You don’t even need to chop them, just toss them in with the dough!
I love adding the pb cups whole because when you turn on the mixer, it breaks them apart in all different sizes. That means, while every bite has some peanut butter love, some bites have a big ol’ hunk of those glorious peanut butter cups.
I love making cookie bars because they are so easy! Just throw all the dough in a pan and bake! Perfect for lazy days when you’re craving some homemade sweets

Reese’s Peanut Butter Cookie Bars

- 1 cup butter (softened)
- 1/2 cup creamy peanut butter
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 2 1/2 cups flour
- 1 cup chocolate chips
- 10oz mini peanut butter cups
|Preheat oven to 350 |
In large mixing bowl cream butters and sugars until light and fluffy. Add eggs and mix again. Add salt, soda, and vanilla and mix well. Slowly add in the flour mixing just until combined. Add chips and peanut butter cups and mix until peanut butter cups are distributed evenly throughout dough.
Spread into a greased 9x13" pan and bake for 20 - 25 minutes. Do not over bake. Store covered at room temperature.
