Creamy Chicken Noodle Casserole

- 12oz spaghetti (cooked and drained)
- 1/2lb carrots (chopped)
- 2 stalks celery (chopped)
- 1 small onion (finely chopped)
- 3 cups chicken (cooked and chopped)
- 1 can cream of chicken soup
- 2 cups chicken stock
- salt and pepper (to taste)
- 1 cup french fried onions
|Saute the celery, carrots, and onion with a TBS of oil over medium heat until they start to soften (about 12 minutes).|
|In a large bowl stir together the veggies, chicken, spaghetti, soup, chicken stock, and salt and pepper. Pour into a greased 9x13" pan. Bake covered at 350* for 25 minutes. Uncover and top with french fried onions and bake 10 minutes more.|
