I love, love, love Mexican food and I really love fast and easy dinner ideas! This casserole is an easy and super tasty dinner with some delicious Mexican flavors that the whole family will love!
A few days ago I headed to Walmart to try out the Tex Mex Chicken Fajita Recipe Makers from Kraft. I have made the New England Pot Roast and was ready to experiment with a new flavor. Like, I said, I love Mexican food, so this was an easy choice.
Instead of making the fajita recipe on the box, I used the same ingredients to make a comforting, cheesy casserole! It has been so stinkin cold here, that a nice hot casserole sounded like the perfect meal.
You guys, this was so good! It only took a few minutes of prep time and 25 minuted in the oven and the result was fantastic! I love when you can make a delicious, well balanced meal out of just a handful of simple ingredients in a small amount of time. It sure makes dinnertime more pleasant! Easy Chicken Fajita Casserole

|Total time||40 minutes|
- 2 cups boneless skinless chicken breasts (cubed)
- 1 Small onion
- 1 Small green pepper
- 1 box Tex-Mex Chicken Fajita Kraft Recipe Makers
- 6 Medium soft flour tortillas (chopped)
- 2 cups shredded cheese (I used Mexican Blend)
|In a large skillet cook the chicken, onion, and pepper in the simmer sauce provided in the Tex Mex Chicken Fajita kit.|
|Prepare a 8" baking dish with non stick cooking spray and cover the bottom of the pan with 1/2 of the cut up tortillas. Spread 1/2 of the chicken mixture on the tortillas, and top with 1/2 the salsa provided in the kit. Sprinkle with 1 cup of cheese. Repeat layers one more time.|
|Cover with foil and bake at 375 for 25 minutes.|
