I have shared with you my recipe for the Perfect Chocolate Chip Cookie. It always gets rave reviews, and many of you have tried it and loved it too! I took that recipe and gave it a little tweak. I added coffee. Oh my word.

I have developed a habit of drinking a cup or two of coffee when my little ones go down for a nap each day. It’s nice to have a few minutes of down time – well semi down time. My 3 month old is not on a regular nap schedule yet. But that’s fine with me. I am perfectly happy to have that one on one time with him, and if he falls asleep on my chest? Well that’s just frosting
Anyway, you know what goes great with coffee? Chocolate. And cookies. Why not add the coffee directly into the cookie dough, I thought?
Mmmmmm. It’s a good idea, trust me. The coffee flavor isn’t overpowering, but it really enhances the chocolate in these cookies and adds a little something special! Give them a try! They might just become your new favorite ccc!
Coffee Chocolate Chip Cookies

- 1 cup unsalted butter
- 2 tablespoons canola oil
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 1/2 tablespoon instant coffee granules
- 2 eggs
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 3 cups all purpose flour
- 2 cups semi sweet chocolate chips
|Preheat oven to 350 |
In a large mixing bowl cream together butter, oil, coffee, and sugars until light and fluffy. Add eggs, vanilla, and salt and mix until combined. Add in the baking soda and half of the flour and mix well. Pour in the remaining flour and mix only until combined. Stir in chocolate chips.

Bake for 7 minutes. Pull them from the oven when the edges are slightly golden and the centers look just barely done. After 2 minutes remove cookies from sheets onto cooling racks.
Store in an airtight container at room temperature.
