In the summer time we just cannot get enough strawberries! It doesn’t matter how much I buy, they never have a chance to go bad. We had a big family gathering last weekend and I thought chocolate cupcakes with this Easy Strawberry Frosting was the perfect treat to bring along. Not only does it look pretty, but the light and airy creaminess is perfection on top of these ultra chocolatey cupcakes!

Normally I prefer chocolate on top of chocolate, with a side of chocolate. Who’s with me?

But when it’s really hot outside, I tend to choose desserts that aren’t quite as rich. Sure, I still made a chocolate cupcake, but this time the frosting was fruity and fluffy, light and creamy. And who doesn’t enjoy chocolate with strawberry!

The kids went bonkers for these, and the girls all loved how pretty and pink they were! I loved it on the chocolate cake (I used this recipe), and now I’m thinking a banana cake needs to happen ASAP with a nice generous dollop of this strawberry frosting on top. Mmmm…

Easy Strawberry Frosting

Serves 24
This Easy Strawberry Frosting is light and creamy, and it's the perfect compliment to your favorite chocolate, vanilla, or banana cupcakes!


  • 4oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1/4 teaspoon strawberry extract
  • 4 tablespoons Nestle Strawberry Quick
  • 2 tablespoons cream


Step 1
In a small bowl dissolve Strawberry Quick into the cream, set aside.
Step 2
In a mixing bowl beat the cream cheese and butter until very light and creamy - at least 2-3 minutes. Add in the powdered sugar and strawberry extract, and half of the cream mixture. Beat on low until combined, then on high until light and fluffy. If too thick, add remaining cream.
Step 3
Pipe or spread onto cooled cupcakes. Store covered in the refrigerator.
