This is the perfect light dessert to enjoy on a hot day. It’s no bake (yay!) and is a great way to use those sweet summer strawberries! You can serve these bars straight from the fridge, or if it’s a really hot day, try them frozen!

We have had a surprisingly mild summer. Sure some days have been hot but we have had a lot of days where a jacket was necessary! Crazy!

I enjoy a no bake treat no matter what the weather is like. Less time in the kitchen means more time playing outside with my little ones. These bars are easy to put together and I like easy :)

If you choose not to freeze them, you need to understand that these are creamy bars. They are not sturdy-grab-one-and-run-out-the-door bars. They are more of an eat-on-a-plate-with-a-fork bars. Ok? They are like pie but in bar form :)

Strawberry Pretzel Bars

Serves 24
Strawberry Pretzel Bars are an easy and delicious no bake dessert that everyone will love! Cool, creamy strawberry filling over a sweet and salty crust! Yum!

Ingredients

  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 8oz Cool Whip (or whipped cream)
  • 1 1/2 cup strawberries (cut into bite sized pieces)

Crust

  • 2 1/2 cups crushed pretzels
  • 1/4 cup honey
  • 1/4 cup melted butter

Filling

  • 4oz cream cheese (softened)

Directions

Step 1
Combine the pretzels, honey, and butter and press into a greased 9x13" pan. Freeze while you make the filling.
Step 2
In a large bowl beat together the cream cheese, powdered sugar, and vanilla until smooth and creamy. Stir in Cool Whip and strawberries. Spread over crust and freeze at least 2 hours. Let sit at room temperature a few minutes before cutting into squares.
Store covered and enjoy either frozen or refrigerated.
